Harvest and Winemaking
Our Chianti DOCG is the result of our Sangiovese harvest, from our south western facing vineyards The fermentation takes about 10 days once it’s brought into the winery, and it takes place in concrete containers without the addition of selected yeasts or chemical additives, save for the small addition of sulfur dioxide prior to bottling. The malolactic fermentation, which occurs naturally, takes place both in concrete and steel tanks where it will remain for about 6 months for ageing.
A light red wine that expresses it’s terroir with a beautiful freshness and minerality. On the nose, shades of red fruits, black pepper and violet.
Optimal pairings include traditional Tuscan dishes: Pasta with Ragu, roasted pork, red meats and poultry.
